Lancang Food

Lancang Lahu Autonomous County(simplified Chinese: 澜沧拉祜族自治县; traditional Chinese: 瀾滄拉祜族自治縣; pinyin: Láncāng lāhùzú Zìzhìxiàn) is an autonomous county under the jurisdiction of Pu'er City, in southwestern Yunnan province, China. Lancang is the same as Lan Xang, and refers to the Mekong River (known in Chinese as the Lancang) on its eastern borders and adopted by modern Laos, a Tai word meaning Million Elephants. A large portion of the population are of Lahu ethnicity, and Lahu language is one of the official languages in the county. There are a large number of ethnic groups in Lancang Lahu Autonomous County, so the dishes are rich and unique such as the Sticky Rice Cake of Lahu People(拉祜糯米糕), Tuotuo Meat(坨坨肉), Ox Sa Pie of Dai minority(傣味牛撒撇), Fubang Ham(富邦腊肉) and so on.


Sticky Rice Cake of Lahu People(拉祜糯米糕)

Cook the sticky rice. Pound until smooth (If you don't have a large mortar for pounding rice, you can place the rice in a sack and pound with a rock). Cook and grind white or black sesame seeds and use the powder to cover a large bamboo mat or other pan. Form the rice into small cakes and place on the sesame-covered mat. The cakes can be eaten immediately or left to dry for one or two days. Once dried, the cakes can be cut into small pieces and fried. Sticky-rice cakes are usually eaten with fried pork. During the New Year's Festival these cakes are given to friends or guests as souvenirs.


Tuotuo Meat(坨坨肉)

A typical Yi dish meaning "salted lumped of meat." The cooking method is to cut meat into lumps and put it into water and then heat the mixture. Sichuan natives call lumps as "tuo" and so the dish has got a Chinese name: "Tuo tuo meat." Tuo Tuo meat is characterized by a large block and fat but not greasy, fragrant meat fresh and delicious, authentic pork filling!


Ox Sa Pie of Dai minority(傣味牛撒撇)

Ox Sa Pie, specially cooked, is a well-known dish for guests when festivals or weddings are celebrated around Dai minority, Jinggu county. They cook this dish with the local yellow ox whose back-meat is burnt yellow, cut into filiform, mixed and stirred with cooked tripes, ginger, garlic, pepper, peanut pieces and other perfume and condiments, added by boiled and filtered ox-sausage water or bile. Next will be a busy time for your mouth and stomach. It is not only some kind of soft, tasteful, fragrant, colorful food, but also a medicine which invigorates the stomach, reduces hot, and whets one's appetite.


Fubang Ham(富邦腊肉)

Ham is pork that has been preserved through salting, smoking, or wet curing. It was traditionally made only from the hind leg of swine, and referred to that specific cut of pork. Ham is made around the world, including a number of highly coveted regional specialties, such as Westphalian ham and Jamón serrano. Technically a processed meat, "ham" may refer to a product which has been through mechanical re-forming. The precise nature of meat termed "ham" is controlled in a number of areas, often by statute, including the United States and European Union. In addition, numerous ham products have specific geographical naming protection, such as Prosciutto di Parma and Prosciutto Toscano PDO in Europe, and Smithfield ham in the US.
