Malipo Food

The famous snacks in Wenshan city including: Pretzel(椒盐饼),Wentao Rice noodles(温淘米线),Fried Baba(油炸粑), hummus Baba(豆沙粑粑),all of those can be find in Malipo In Malipo you can enjoy Broiled bean curd,, Pickle Loach, ,Sanqi Steaming Pot Chicken and other snacks. InMalipo  county Corn Pancakes( 玉米饼), Block-shape Meat(坨坨肉). Drunken Shrimp( 醉 虾 )Lotus root starch (藕粉 ) Red Kidney Beans (红腰豆) and Sour Soup chicken (酸汤鸡),are the specialties and you should not miss.



Corn Pancakes 玉米饼

Ingredients:
1 cup cooked corn kernels
2 eggs
1/2 cup buckwheat flour
1/2 cup water
1/2 teaspoon salt
1/2 teaspoon sugar
1/2 cup celery leaves, minced
1 cup corn oil
Preparation:
1. Mince the corn kernels until quite fine with two cleavers or put them in the blender.
2. Beat eggs until very well mixed and lighter in color, then add the flour, water, salt, and sugar, the minced leaves and the minced corn kernels.

3. Heat oil and drop a scant one-quarter cup of batter into a wok or fry pan. Cook the pancake until it looks done, then turn it over and cook it in the other side. Keep it warm in a two hundred degree oven, no higher as they will dry out. Repeat until all batter is used up (makes eight pancakes). Then serve

 


Yi-style Pickles and Pork

Ingredients:
2 stalks celery with leaves, chopped coarsely
3 cloves garlic, minced coarsely
1 cup minced Chinese cabbage
1 carrot, minced fine
1 large pickle, minced fine
10 Sichuan pepper corns
1/2 cup fortified Chinese wine or sherry
1 Tablespoon Chinese mature black vinegar or balsamic vinegar
1/2 Tablespoon salt
1/2 Tablespoon sugar
2 Tablespoons corn oil
1/4 pound pork filet, cut into thin strips
1/2 dried red chili pepper, seeded and minced
2 scallions, minced
2 Tablespoons cornstarch mixed with two tablespoons cold water
Preparation:
1. Rinse celery, garlic, Chinese cabbage, carrot, and the pickle three times in cold water, then put it into a sterilized jar. Add the wine, vinegar, salt and sugar and close loosely and set this aside in a cool dark place for two days. Then strain the solids and set aside.
2. Heat oil and fry the pork and the chili pepper at a very high temperature for one minute. Add the reserved vegetable mixture and cook another two minutes before adding the scallions.
3. Add the cornstarch mixture and cook only until it thickens and the sauce clears. This recipe can be served hot or warm.

Coffea arabica  of Malipo 麻栗坡小粒咖啡

 

Malipo coffea arabica is a specialty of Malipo County of Wenshan Prefecture,Yunnan Province

Coffea arabica /əˈræbɪkə/ is a species of Coffea originally indigenous to the forests of the southwestern highlands ofEthiopia. It is also known as the "coffee shrub of Arabia", "mountain coffee", or "arabica coffee". C. arabica is believed to be the first species of coffee to be cultivated.

Wild plants grow between 9 and 12 m (29 and 39 ft) tall, and have an open branching system; the leaves are opposite, simple elliptic-ovate to oblong, 6–12 cm (2.4–4.8 in) long and 4–8 cm (1.6–3.2 in) broad, glossy dark green. The flowersare white, 10–15 mm in diameter and grow in axillary clusters. The seeds are contained in a drupe (though commonly called a "cherry"; the plural form is simply "cherry"—used only when referring to the fruit of C. arabica—when referring to the actual cherry fruit, the appropriate plural is "cherries") 10–15 mm in diameter, maturing bright red to purple and typically contains two seeds (the coffee seeds).
