Weixin county is located in the junction area of Yunnan, Sichuan and Guizhou province, people’s eating patterns here are deeply influenced by Sichuan dishes and Guizhou dishes. Weixin Sour Fish
Authentic fish in sour soup originates in the fish cave village, white water village, Qinglong village and luobu village of Luobu river basin(罗布河流域). The sour fish must be pickled for two to three years, the process is very complicated. However, it deserves it, because the taste of the sour fish is unforgettable.
Hot and Sour Dumpling Noodles(酸辣饺面)
A special local snack which mixes dumpling and noodles together. Cooks imitate the way of cooking hot and sour rice noodles, changing the food material to dumpling and noodles, which give the snack a distinctive flavor.
