Lahu ethnic fire-braised fish in Lantsang River,Puer

The special fire-braised fish is one of the most favorite dished in Simao Prefecture, Yunnan. Especially for Lahu minority, they are fond of this cuisine which is cooked without pot or stoves while tastes much better.

Here is the recipe for the special fire-braised fish. First, gut the fish and dry it in the air. Then add the green onions, ginger, coriander, garlic, chili, salt, gourmet powder and a little lard into the belly of the fish. After that, wrap up all of them with the tender banana leaves and leave them into the bonfires for about half an hour. Its delicious odor would greet you and tastes incredibly yummy.
