Fish (or Chicken) with Sour Bamboo Shoots is a famous specialty of Dai people.
One of the main ingredients, the sour bamboo, is made from fresh and tender bamboo shoots in the early summer. They are preserved or pickled in vinegar together with salt and chili pepper for about a couple of months. To make this dish, sour bamboo shoots are first fried and then boiled in water for a while and finally fish or chicken chunks are boiled in the sour soup.
