Among assorted bamboos in Xishuangbanna in the south of Yunnan Province, the "sweet bamboo" (dendrocalamus latiflorus) is the one whose shoots contain rich sugar. Tasting sweet and tender, these bamboo shoots are the favorite of the local Dai people.
Delicacies prepared from the sweet bamboos vary a lot. They can be cooked by boiling (with chicken), steaming, roasting, and frying.
